Friday Favorites 6/28/13

Happy Friday, everyone! I'm so glad for the weekend. I've been back on tracking with exercising and following my marathon training so I'm feeling sore today! I'm also back on track with blogging so here's some Friday favorites. 

1. Favorite News Story- Supreme Court striking down DOMA

Not to get all political on you, but I believe in equal rights for all types of love and people, and this makes me happy. It's gone on long enough. 

2. Favorite Vegetable- Beets

The past few weeks I've been picking up fresh beets at the farmer's market and then roasting them whole with a little bit of salt and pepper like this recipe here.  They are delicious in salads, with some goat cheese, or mixed with some chicken and brown rice.  I had only ever eaten canned beets every now and then but now I'll never go back!


3. Favorite Snack- Chocolate Covered Goji Berries

I got these Himalaya brand chocolate covered goji berries in a package from my favorite discount health food store Vitacost (more on that package next week!) and can NOT STOP eating these. They are delicious on some greek yogurt, on oatmeal, or by the handful! I keep telling myself it's not bad because goji berries are a superfood packed with antioxidants and vitamin A! 

4. Favorite Workout Song- Let's Go by Matt and Kim 


I saw Matt and Kim perform again at Bonnaroo, and they always put on an AMAZING show. They got the crowd so excited, energetic, and pumped up. It was also the only show I saw at Bonnaroo with tons of happy crowd surfing! This song has been in a few movie trailers and such  but it's super fun and happy. I've been jamming out to it a lot lately!

5. Favorite Recipe for this Weekend- Paleo Cookie Dough Bites

Now I don't follow any particular eating plans, but I still love paleo recipes because most are gluten-free and dairy-free which helps my tummy issues. These cookie dough bites sound delicious and are just the thing to satisfy my sweet tooth. I found the recipe here at Fast Paleo which is an awesome recipe resource for tasty paleo eating! I'll definitely be whipping up a batch  (or two!) of these this weekend!


I plan to spend some time this weekend outside and enjoying myself. I can't believe it's almost July so I need to hurry up and do some summery activities which will definitely include eating some ice cream!

    i'm going horseback riding this weekend - long weekend in Canada - should be tons of fun.

  2. I love beets too, we roast them most of the time :) Agree with you on the news story too, so happy for my friends who are effected by this :)

  3. I love beets. My great-grandmother used to make the most amazing pickled beets and there is just no way I can replicate them. Craving goat cheese and beets in a salad now, in the worst way.

    I'm recovering this weekend. Lots of laying in bed, drinking gatorade, and reading books. I'm not excited, but I have to heal up.
