One of my goals for 2015 (a repeat from 2014-whoops) is to take the time each month to try one more-involved recipe from a cookbook I have. I always have big ideas of trying lots of fun recipes and have a nice collection of cookbooks but frankly, dinner ends up being something easy or a quick idea I find on Pinterest. It's a waste to have all those beautiful cookbooks collecting dust on my shelf so I am determined to crack them open each month.
To hold myself accountable I'll be documenting a new recipe from a cookbook each month that I've tried and love. I mean, I wouldn't want to share a recipe that was awful with you all.
For Christmas I received The Skinnytaste Cookbook (see here to buy!) which I had been itching to get my hands on. As I quickly flipped through the cookbook last weekend I was immediately interested in some of the easy and yummy-looking seafood recipes since I sadly do not buy seafood often. I decided to go with a recipe for Bangin' Good Shrimp which is inspired by the delicious Bang Bang Shrimp from Bonefish Grill. Bang Bang Shrimp are deep fried and covered in a delicious sauce, so this Skinnytaste version is much healthier but just as flavorful!
The recipe called for making a salad to serve the shrimp over, but I ended up serving the shrimp over quinoa and having a salad on the side. I put the original recipe with the salad directions below anyways!
Bangin' Good Shrimp

Ingredients
5 tablespoons light mayonnaise
3 tablespoons thai sweet chili sauce
1-2 teaspoons Sriracha sauce, or to taste
1 pound shelled and deveined large shrimp
2 teaspoons cornstarch
1 teaspoon canola oil
